Crockpot Beef Brisket and Vegetables

5lb beef brisket
1 large onion, chopped
1 large carrot, peeled and chopped
2 tsp salt
1 bay leaf
1 cup water or beef stock
1/2 tsp thyme

If the brisket is too large to go into the pot whole, cut it in half or roll it and tie with string. Add the chopped onion, carrot, salt, bay leaf, thyme and water or stock. Cover the pot and cook on LOW 10-12 hours .
