<p>Place a baking sheet large enough to take the four tart shells in the oven, and preheat the oven to 450F (230C). Cut the bacon into 1/4&#8243; pieces and fry until crisp, then drain on paper towels.Beat the eggs and egg yolks in a medium bowl, and blend in the half-and-half. Add the salt, pepper and mustard and blend well. Place the bacon pieces evenly in the tart shells,sprinkle the cheese over the bacon, and pour 1/4 of the egg mixture into each shell. Place the tart pans on the preheated baking sheets in the oven, and bake 15 minutes until the crusts begin to brown. Reduce the oven temperature to 325F (165C) and bake 15 more minutes until a knife inserted in the center comes out clean. Slide out of pans onto plates and let stand 5 minutes before serving.</p>
<p>Smaller tart shells can also be used to make tiny appetizer quiches which can be served hot or cold.</p>
