Blackberry Baked Chicken
6-8 Chicken pieces
3/4 cup blackberry jam or jelly
1/4 cup Fruit or wine vinegar
salt and pepper to taste
Preheat oven or toaster oven to 375F (190C). Rinse the chicken pieces and dry. Mix the jelly and vinegar together thoroughly to make a sauce. Brush the sauce over the chicken pieces and sprinkle with salt and pepper. Chicken may now be refrigerated until time to cook. Arrange chicken pieces skin-side down in a shallow baking dish, bake about 45 mins (less for wings), turning and basting several times during cooking. If the sauce reduces to the point where it may start to burn, the dish may be covered or a small amount of water added.
